Instructions: Trim and clean the mushrooms thoroughly
Fry them in a little oil with some salt and pepper then strain in a colander. Fry the chicken breasts in a little of the butter. Seal the flesh side first then the skin side. Cook the chicken breasts in the oven at 230 degrees C/450 degrees F/ gas mark 8 for 5 minutes then leave to rest for a further 5 minutes Reheat the mushrooms in a little more butter add the parsley and check the seasoning. Reheat the sauce. Pour enough sauce into each large bowl to cover the bottom. Spoon the mushrooms evenly on top of the sauce. Cut the chicken breast thmly at an angle and fan out. Place on top of some of the mushrooms. Place the ravioli on top of the chicken slices. Email this Recipe:
