Instructions: On a large platter, arrange lettuce leaves, steams toward the center. Brush avocado with lemon juice to prevent discoloration. Arrange alternating ring of avocado and grapefruit around edge of platter. Arrange alternating ring of orange and red onion inside. Toss chicken with 1/3 cup of mayonnaise and mound in center of platter. Pass remaining mayonnaise separately.
Orange Mustard Mayonnaise In a medium size bowl, whisk together egg yolks, mustard and lemon juice. Slowly whisk in oil, drop by drop, until mayonnaise begins to thicken. Gradually whisk in remaining oil in a thin stream. Blend in orange peel and juice. Season to taste with salt and pepper. Cover and refrigerate until serving time.
