Instructions: Wash the rice and cook as per steamed rice.
Soak the dried mushrooms in warm water for about 20 minutes until they are soft. Meanwhile cut the red pepper carrot and sausages or ham into small dice. Squeeze the excess liquid from the mushrooms and remove and discard their stems. Cut the caps into small dice. If you are using frozen peas make sure they are thoroughly thawed. Heat a wok or large fryingpan. Add the oil and spring onions and Stir fry for about 30 seconds. Then add all the vegetables and the sausages or ham. Stir fry the mixture for about 2 minutes and then add the soy sauce. Give the mixture a few stirs and then add the sesame oil. Remove the pan from the heat and let the mixture cool. When the rice is almost ready pour the cooked mixture over it to cover the rice. Let the rice and the stirfried mixture cook for a further 5 minutes. Then stir to mix well. Turn onto a serving platter and serve at once. This is a popular rice dish in the south. At first glance the recipe may seem similar to that for Fried Rice but it is really quite different since the rice and the other ingredients all have to be cooked separately and then combined.
