Instructions: In bowl, stir buttermilk into cereal; let stand for 5 minutes or until cereal is softened. Beat in egg, oil and vanilla extract.
In large bowl, combine flour, sugar, baking powder, baking soda and raisins. Add buttermilk mixture; stir just until combined. Spoon into 12 nonstick or paper-lined medium muffin cups. Bake in 400 F. oven for about 20 minutes or until firm to the touch. Makes 12 medium muffins. Description: "High-fibre muffins are always at the top of the breakfast hit parade."
