1/2 cup buttermilk *see Note
1/2 cup all-Bran(r) Cereal
1 lrg egg beaten
3 tbl vegetable oil
1 tsp vanilla extract
1 cup whole wheat flour
2 tbl granulated sugar
2 tsp baking powder
1/2 tsp baking soda
Instructions:
Instructions: In bowl, stir buttermilk into cereal; let stand for 5 minutes or until cereal is softened. Beat in egg, oil and vanilla extract.

In large bowl, combine flour, sugar, baking powder, baking soda and raisins. Add buttermilk mixture; stir just until combined.

Spoon into 12 nonstick or paper-lined medium muffin cups. Bake in 400 F. oven for about 20 minutes or until firm to the touch.

Makes 12 medium muffins.

*If you dont have buttermilk, stir 4 teaspoons vinegar or lemon juice into 1-1/2 cups milk; let stand 5 minutes.
