Instructions: Preheat oven to 425 degrees and coat 18 muffin cups with canola cooking spray.
Combine flaxseed, flours, sugar, baking soda and salt in large mixing bowl and beat on low to blend well. Add raisin bran and beat on low speed until just blended in. Combine buttermilk, oil, maple syrup and eggs in another bowl and whisk with fork to blend well. Pour into dry ingredients and beat on low speed just to blend. Spoon 1/4 cup batter into each prepared muffin cup and bake until tester inserted in center of muffins comes out clean, about 15 minutes. Transfer to rack and cool. Email this Recipe:
