Ingredients:
Amount Ingredient
2 x eggs
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
2 cup self raising flour
1/2 tsp cinnamon
1/4 tsp grated nutmeg
1/2 tsp bicarb soda
Instructions:
Instructions: Cream butter and sugar until thick and pale.

Add beaten eggs.

Combine dry ingredients and add to mixture.

Roll into logs of 6" x 1 1/2" diameter.

Wrap in plastic or greaseproof paper and refrigerate for 24 hours.

To cook:
Cut discs from log of about 1/2" thickness.

Place on a lightly greased baking tray and bake 350 F for 10-15 minutes.

Note: Mixture will keep in fridge for up to 3 weeks.
