3/4 cup raisins
3/4 cup boiling water
1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
1 cup graham cracker crumbs
3 tsp baking powder
1/4 cup whole wheat flour
1/2 cup skim milk
3 tbl oil
1 tbl sugar
Instructions:
Instructions: Heat oven to 375 degrees. Line 12 muffin cups with paper baking cups and spray with nonstick cooking spray, or spray muffin cups. In small bowl, combine raisins and boiling water; set aside.

In large bowl, combine graham cracker crumbs, all-purpose flour, brown sugar, whole wheat flour and baking powder; mix well.

In medium bowl, combine milk, oil and egg whites; beat well. Drain and discard water from raisins. Add raisins to milk mixture. Add to dry ingredients all at once; stir just until dry ingredients are moistened.

Spoon batter evenly into sprayed paper-lined cups.

In small bowl, combine sugar and cinnamon; mix well. Sprinkle over muffin batter. Bake for 14 minutes to 18 minutes or until toothpick inserted in center comes out clean. Cool 1 minute; remove from pan.

Serves 12.
