Instructions: Sift flour once, measure, add baking powder and salt, and sift again.
Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add egg and vanilla; than add flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Chill until firm enough to roll. Roll 1/4 inch thick on slightly floured board. Cut with 2 1/2" cooky cutter. Place 1 tsp. raisin filling on a circle, and place another circle on top, pressing edges together. Bake in hot oven (425 degrees) 6 to 8 minutes. Makes 4 dozen cookies. RAISIN FILLING FOR RAISIN SURPRISES 2 Cup raisins, chopped 2/3 Cup sugar 2/3 Cup boiling water 2 Tbsp. lemon juice 1 Tbsp. butter Cook raisins, sugar, and water 6 to 8 minutes or until thick, stirring constantly. Remove from fire; add lemon and butter. Figs or dates may be substituted for raisins. Email this Recipe:
