250 gm bread f1our (high-protein flour)
50 gm plain f1our
1/4 tsp salt
25 gm sugar
1/2 tbl instant yeast
1 x egg
1/8 tsp bread improver
1 tsp milk powder
24 gm condensed milk

125 ml water

40 gm butter
Fruit filling (mix together and set aside)
100 gm sultanas
25 gm chopped walnuts
Grated rind of 1 orange
1/2 tsp cinnamon powder
1 tbl melted butter

COMBINE the flours and salt in a mixing bowl. Stir in the sugar, yeast and the rest of the ingredients in (A). Add in (B) and mix on low speed for 2 minutes then turn to medium speed for 2 minutes until a dough is formed.

Add in the butter (C). Mix on low speed for 2 minutes and on medium speed for 6-8 minutes. Transfer dough to a lightly greased bowl, cover and leave aside for 15 minutes.

Take out dough onto a floured surface, roll out flat and cover with a piece of gladwrap to prove for 20 minutes.

Then flatten dough into a rectangle. Brush lightly with melted butter. Sprinkle on the filling. Roll up tightly, tucking in the ends slightly as you roll. Place into a greased and floured loaf tin, cover and leave to rise for 35 minutes until almost double in volume.

Preheat oven to 200 degrees Celsius. Brush the loaf with glaze. Bake for 10 minutes. Lower temperature to 170 degrees and bake for 20 minutes until golden. Cool on rack before removing.
