Instructions: MAKES 1 1/2 CUPS LACTO
This simple yogurt-based sauce is cool and refreshing on the palate alongside spicier foods. You also can add chopped cucumber, spinach or tomatoes to raita. In medium bowl, combine yogurt, buttermilk and salt. Gradually add water, stirring until mixture is smooth and thin but nor too watery. (Depending on the thickness of yogurt, you may need to add a little more water, but do so only one teaspoon at a time.) In small skillet, heat oil over medium heat. Add mustard seeds and cook until seeds pop. (You may need to cover skillet to prevent seeds from popping out.) Remove from heat and let cool. Add seeds to yogurt mixture and mix well. Cover and chill 1 hour or until ready to serve. Stir well before serving. Email this Recipe:
