Instructions: In a large saucepan, bring the water to a boil. Toss in the string beans, celery, and parley, and boil on medium heat for 5 minutes. Add zucchini and continue boiling for 3 to 4 minutes. Puree, solids first and add the cooking water to your desired consistency - should be like pea soup. If you havent gotten rid of all the celery and bean strings, you can press through a sieve.
Makes about 6 cups of soup. Comments: More of a pain to make than her devil-may-care cabbage soup, but a nice break and very pure. Good hot or cold. Yield: 6 cups Email this Recipe:
