Instructions: Preheat the oven to 375 degrees. Coat a 9- by 13-inch baking dish with nonstick cooking spray.
Place the chicken leg quarters in the baking dish and sprinkle with the salt and black pepper, then drizzle with the melted butter. Bake for 45 to 50 minutes, or until the chicken is golden and cooked through. In a small saucepan, combine the remaining ingredients, mix well. Cook over low heat for about 1 minute, until the sauce is smooth, stirring occasionally. Remove the chicken from the pan and place on a serving platter. Top with the sauce and serve.
