Instructions: Crush the raspberries with a fork and stir in about a tablespoon of lemon juice.
You should end up with a red slush still with the odd lump of fruit in it. Leave to chill. Slice the peach. If it is not as luscious as you would like it to be then poach it gently in a little sugar syrup slide off the skin and slice it when cool. Whip the cream gently n should only be thick enough to lie in soft waves. Overwhip and you have ruined the dessert. In two sundae glasses add the ice cream the whipped cream sliced peaches and raspberries in rough layers. Drizzle a little cassis if using over the peaches as you go. You should finish with a dollop of whipped cream a slick of crushed fruit and a few almonds. Serves 2 Email this Recipe:
