450 gm raspberries tayberries or loganberries
Instructions:
Instructions: Sieve the raspberries and mix with the water wine and most of the syrup.

Add extra syrup or wine to taste.

Preset the freezer to its coldest setting.

Pour the mixture into a shallow container and place in the freezer.

Check after an hour.

Once the sides begin to set break up with a fork and mix into the rest.

Repeat every half hour or so until the whole is a mass of crystals Return to the freezer

Serves 6

Raw young spinach leaves are widely used for salads in Italy when available they make a nice change from lettuce. For a really crisp salad after washing and thoroughly drying the lettuce or spinach place in a polythene bag and leave in the refrigerator for a few hours.
