500 gm Side of fresh undyed smoked haddock
3 x Limes, juice of
1 x Red chilli, seeded and finely chopped
2 tbl Shallots, finely chopped
50 ml Dark rum
Instructions:
Instructions: Trim haddock and remove the skin. Slice thinly at an angle and lay out on a serving dish and cover with the remaining ingredients and serve.
