Instructions: I love to marinate!!! By marinating the cheaper cuts of meat, you will not only save money, because the marinade tenderizes the meat, but the marinade will infuse it with flavour! Marinades are also used on vegetables, poultry, seafood and game. Marinades for meats always contain an acidic ingredient such as vinegar, a citrus juice (lemon, lime, orange, grapefruit) soy sauce or wine. The acid in these ingredients is what breaks down the tougher fibers in the meat, therefore tenderizing it.
Many times you will see a marinade made with more than one acidic ingredient and this is done purely for the added flavour of that ingredient. When marinating anything, it is important that you do so in a non-metal container. Use plastic, glass or ceramic. Metal containers do not react favorably with acidic ingredients and may transfer a metallic taste to the food. most of the marinades I include in this section may be used for more than one type of food, so I will list compatible foods at the end of each recipe. DonOt let my list restrict your choices...by all means try them on other foods as well! All herbs listed in these recipes are of the dried type, if you wish to use fresh, remember to use 1 Tbsp. minced in place of each tsp. of dried. LEMONY HERB MARINADE YIELD 1/2 CUP 1/4 c. lemon juice 1/4 c. olive oil 1/2 tsp. basil 1/2 tsp. oregano 1/2 tsp. thyme 1/4 tsp. salt Combine all ingredients and pour over meat. Turn to coat, cover and marinate for 4-24 hours. Cook by desired method.*CHICKEN OR PORK ISLAND MARINADE YIELD 2/3 CUP 1/4 c. melted butter 1/3 c. honey 1 Tbsp. dijon mustard 1 tsp. curry powder 1/4 tsp. garlic powder Combine all ingredients and pour over meat. Turn to coat well. Marinate for 4-24 hours. Cook by desired method.*CHICKEN OR PORK MEXICALI MARINADE YIELD 1 CUP 1/3 c. olive oil 2 cloves garlic, minced 1/3 c. cider vinegar 1/3 c. apple juice 1 tsp. chili powder 1 tsp. sugar 1 tsp. salt 1/4 tsp. pepper Heat the oil and saute the garlic 2 minutes. Add the other ingredients and bring to a boil, stir until it is smooth. Remove from heat and let cool before marinating your choice of meat. Use the marinade to baste while cooking by the desired method.*BEEF, PORK, CHICKEN OR SEAFOOD. MUSTARD MARINADE I YIELD 1/4 CUP 3 Tbsp. dijon mustard 2 cloves garlic, minced 2 Tbsp. dry white wine 2 Tbsp. olive oil 1/2 tsp. pepper Combine all and brush over meat. Marinate for 2-24 hours. Cook by the method desired. *CHICKEN OR PORK MUSTARD MARINADE II YIELD 2 1/4 CUPS 1 c. dijon mustard 1 c. dry white wine 2 Tbsp. vegetable oil 2 Tbsp. honey 2 tsp. tarragon 2 cloves garlic, minced Combine all ingredients and marinate meat for 4-24 hours, turning often. Cook by desired method. *BEEF, PORK, CHICKEN OR LAMB PEPPER HERB MARINADE YIELD 1 3/4 CUPS 1 c. olive oil 1/2 c. dry white wine 2 tsp. fresh cracked peppercorns 1/4 c. lemon juice 3 cloves garlic, minced 6 green onions, sliced thinly 1/2 tsp. rosemary 1 Tbsp. basil Combine all and pour over meat. Cover and marinate 4-24 hours. Drain and reserve the marinade for basting while cooking by the desired method. To use the marinade as a sauce, just bring it to a rolling boil for 5 minutes and serve with the meat.*CHICKEN OR PORK SPICY GINGER SOY MARINADE YIELD 1/3 CUP 1/4 c. soy sauce 2 Tbsp. oil 1 tsp. dry mustard 3/4 tsp. ginger 3 cloves garlic, minced 2 green onions, sliced thinly 1 jalapeno pepper, seeds removed and minced 2 Tbsp. water Whisk all together and pour over meat. Marinate for 4-24 hours. Cook by desired method. *CHICKEN OR PORK THAI GARLIC MARINADE YIELD 1/4 CUP 6 cloves garlic, minced 2 Tbsp. cilantro 2 Tbsp. lime juice 1 Tbsp. pepper Combine all and rub well into meat. Let stand at room temperature for 1 hour before cooking by desired method. This recipe is best when grilled.*BEEF STEAKS OR SMALL ROAST, CHICKEN (cover and marinate in the fridge 4 hours) OR PORK. SOUTHWEST MARINADE YIELD 2/3 CUP 1/4 c. olive oil 1/3 c. dry white wine 4 cloves garlic, minced 2 jalapenos, seeded and minced 2 Tbsp. cilantro Combine all and pour over meat. Turn to coat and marinate for 4-24 hours. Cook by desired method. *BEEF, CHICKEN OR PORK. MOROCCAN MARINADE YIELD 2/3 CUP 1/3 c. olive oil 2 Tbsp. minced parsley (2 tsp. flakes) 2 Tbsp. lemon juice 1 1/2 tsp. chili powder 1 1/2 tsp. cumin 1 tsp. coriander 1 tsp. ginger 1 tsp. soy sauce 2 cloves garlic, minced 1/2 tsp. cinnamon 1/2 tsp. oregano 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. cayenne pepper Combine all ingredients and marinate up to 2lbs. of meat for 4-24 hours. Drain marinade and cook by desired method. *BEEF, CHICKEN, PORK OR SEAFOOD. BASIC WINE MARINADE YIELD 1 3/4 CUPS 1 large onion, minced 1 clove garlic, minced 1/2 tsp. pepper pinch cayenne pepper 1/4 c. white wine vinegar 2 Tbsp. olive oil 3/4 tsp. thyme 1/4 tsp. lemon zest 1 Tbsp. lemon juice 1/2 tsp. honey Whisk all ingredients together and then pour over meat. Turn to coat well. Marinate for 4-24 hours then cook by desired method. *BEEF, CHICKEN OR PORK. BASIC BBQ FLAVOURED MARINADE YIELD 1/3 CUP 1/2 c. barbeque sauce of choice 2 Tbsp. red wine vinegar 2 Tbsp. oil 2 Tbsp. water Combine all and pour over meat. Marinate 4-24 hours. Cook by desired method. *ANY TYPE OF MEAT OR POULTRY. TASTY STEAK MARINADE YIELD 1/3 CUP 1/4 c. apple juice 2 Tbsp. ketchup 1 Tbsp. soy sauce 1 clove garlic, minced 2 tsp. cider vinegar 1 tsp. sugar 1/4 tsp. ginger 1/8 tsp. pepper Combine all ingredients and marinate up to 2 lbs. of steak or a small roast for 4-24 hours. Cook by the desired method. *BEEF, PORK, CHICKEN LEMON SOY MARINADE YIELD 3/4 CUP 1/3 c. soy sauce 1/2 c. lemon juice 4 cloves garlic, minced 1 tsp. ginger Combine all and marinate meat 4-24 hours. Cook by the desired method.*BEEF, PORK, POULTRY OR SEAFOOD. LEMONY STEAK MARINADE YIELD 2/3 CUP 1 tsp. lemon zest 1/3 c. lemon juice 1/4 c. olive oil 4 tsp. Worcestershire sauce 1 tsp. basil 1 tsp. thyme 1 Tbsp. honey 1/2 tsp. pepper 1/4 tsp. salt 2 cloves garlic, minced Combine all ingredients and pour over meat. Turn to coat and marinate for 4-24 hours. Cook by desired method, basting at half of the cooking time. *BEEF OR PORK STEAK SOUVLAKI MARINADE YIELD 1 1/2 CUPS 1 c. olive oil 1/2 c. lemon juice 2 cloves garlic, minced 1/4 tsp. pepper 1 tsp. oregano Combine all ingredients and pour over meat. Turn to coat well and marinate 4-24 hours. Cook by broiling or grilling. *PORK OR CHICKEN CUBAN LIME MARINADE YIELD 1/2 CUP 6 cloves garlic, minced 3/4 tsp. salt 2 tsp. cumin 1 tsp. oregano 1/2 tsp. pepper 1/2 c. lime juice Combine all ingredients and pour over meat. Turn to coat and marinate for 6-24 hours. Drain the marinade and cook by grilling or broiling. *ANY TYPE OF MEAT, POULTRY OR SEAFOOD. For seafood, marinate for the minimum time. Email this Recipe:
