1 x salmon fresh or frozen, (5-12 lbs.)
1 x fresh lemon, thinly sliced
1 x onion, thinly sliced
4 slc bacon, (4 to 6)
Instructions:
Instructions: Rinse salmon in cool water. Sprinkle salt and pepper in cavity. Layer sliced lemons, onions and bacon in cavity. Using butchers string, tie around salmon to hold cavity closed. Pour table salt over the entire outside of the fish. Bake (uncovered) on rack in baking pan at 350 degrees for 1 to 1 1/2 hours, depending on the size of the fish.
