Instructions: * A mixture of sweet and tart such as Empire, Jonathan and Cortland
Cut apples into fourths or eighths, but do not peel or core them. Combine apples and water in heavy saucepan. Cover and cook over medium heat, stirring occasionally, 15 to 20 minutes, or until apples are soft. (To test, press with the tines of a fork or a potato masher. The apples should collapse easily.) Remove from heat and pass apples through a food mill into a bowl. Taste, and if not sweet enough, add some sugar. Season with cinnamon or nutmeg. Serve warm, at room temperature or cold.
