Instructions: Slightly warm 3/4 cup of coconut milk (reserve the rest), add sugar and yeast to milk and let sit until yeast froths up. Add oil, about 2 cups flour, baking powder and salt. Knead mixture and add flour until dough cleans sides of bowl.
Set aside and let rise about 1 hour. Punch down dough; cut into 2- or (3-ounce) pieces and roll into round, pita-style portions. Place on flat tray; brush with coconut milk and bake at 425 degrees until bread is cooked, about 15 to 20 minutes Email this Recipe:
