1/2 x to 2 cups fresh opal basil leaves
1/2 tbl minced sun-dried tomatoes marinated in oil
2 x garlic cloves
2 tbl freshly grated Pecorino Romano cheese
6 tbl freshly grated Parmesan cheese
1/3 cup pine nuts
1/2 cup olive oil
Instructions:
Instructions: Mix the basil, tomatoes, garlic, cheese and pine nuts in a food processor or blender. With the machine running, slowly add the olive oil. Season to taste with salt and pepper and blend to the desired consistency. Let stand for 5 minutes before serving.
