1 cup uncooked long-grain rice
2 cup water
1/2 tsp salt
2 can red beans (15 oz. each)
1 cup lean smoked ham cubed
2 lrg eggs
1/2 cup dry white wine
1 cup picante sauce
1/2 tsp garlic salt
1/4 tsp pepper
Instructions:
Instructions: Bring water to a boil in a 2-quart or larger saucepan. Add rice and salt; reduce heat, cover and simmer 15 minutes or until rice is tender and the liquid absorbed. Meanwhile, combine beans and ham in a large bowl. In a small bowl, beat eggs together, then stir in wine, picante sauce, garlic salt, and pepper. Add egg mixture to the beans and ham. Add cooked rice also, and stir well. Transfer all into oiled 2-quart casserole dish. Top with cheese and bake at 300 degrees for 30 minutes.

Makes 6 main dish servings.
