1/2 slc apple-smoked bacon, diced small*
1/2 med onions, peel & slice thin
1/2 lb red cabbage, coarsely shredded
2 x Granny Smith apples, peel & slice thin
16 oz red wine vinegar
2 oz red wine
1 cup sugar
1 x bay leaf
Instructions:
Instructions: *Regular smoked bacon may be used if apple smoked bacon is not available.

**Chicken base paste is available at Tom Thumb-Page & Sams Club stores.

In large stainless steel braising pan, render the bacon and slowly sweat the onions until they are transparent. Add the apples and cabbage. Cook 4 - 5 minutes, covered.

Meanwhile, in a separate bowl, combine the vinegar, wine, sugar, bay leaf and chicken paste. Mix until all is dissolved and add to the cabbage.

Cook over low to medium heat, about 40 minutes or until cabbage is tender, but still has a bite.
