Instructions: Toss together the cabbage, apple, green onions and blue cheese in a large salad bowl.
In a separate small bowl, whisk together the vinegar, oil, fennel seeds and 1 teaspoon sugar. Taste, and add salt and pepper and additional sugar, if desired. Pour the dressing over the salad and toss to blend. Sprinkle the pecans on top and serve. Note: To toast nuts, heat in a dry skillet over medium heat until they start to brown. Stir occasionally.
