1/2 lb Bacon strips, halved
1 lrg Head red cabbage, cored and shredded
2 lrg Green apples, cored and sliced
1 lrg Onion, chopped
2 tbl Honey
2 tbl Fresh lemon juice
1/2 cup Red wine

Cook the bacon strips until crisp. Remove and reserve. Remove all but 4 tablespoons of the bacon fat from the pan and add the cabbage. Cook over medium heat for about 10 minutes.

Stir in the remaining ingredients and simmer, covered, for about I hour.

Season to taste with salt and pepper. Just before serving, sprinkle with the reserved bacon.

Serves 6-8.
