1 lrg head red cabbage, shredded
(about 12 cups)
2 x apples, seeded
and chopped into small pieces
1/2 cup red wine vinegar
2 tbl water
3 tbl brown sugar

Instructions: Cabbage shrinks considerably when cooked this way; so while it may seem like youre starting out with a lot, you really won t end up with as much as you think. This reminds me of my grandmothers cabbage and is one of my favorite ways to eat the vegetable. Its great hot from the slow cooker as well as chilled a day or two later.

MAKES 6 SERVINGS

1. In a 5-quart electric slow cooker, combine the red cabbage and apples. Mix together the vinegar, water, and 2 tablespoons of the brown sugar. Pour over the cabbage mixture.

2. Cover and cook on the low heat setting 6 hours, or until the cabbage is tender. Stir in the remaining 1 tablespoon brown sugar and seasoned salt to taste. Serve immediately as a vegetable side dish or refrigerate until cold and serve chilled.
