2 tbl Butter or goose drippings
4 slc Smoky bacon diced
1 lrg Onion chopped
2 lb Red cabbage shredded
1 lb Apples peeled, cored,
and sliced
1/2 cup Brown sugar
1 pch Ground cloves (small pinch)
1 tsp Ground allspice
1 tsp Salt
2/3 cup Red wine
2 tbl Wine vinegar
Instructions:
Instructions: Melt butter or dripping in a large flameproof casserole and gently cook bacon and onion until fat runs from bacon and onion is softened. Put in cabbage, pressing down evenly, and cover with layers of apple slices. Add other ingredients, cover tightly and simmer for 2 1/2 to 3 hours, checking occasionally to see if liquid needs topping up with more water or stock. Taste and adjust seasoning before serving.

This recipe yields 8 servings.
