Instructions: Cut the capsicum in half and discard the seed pod. Cut the capsicum flesh into fine strips. Dice the tomatoes.
Heat the olive oil and add the minced garlic, sauteing for 2 minutes. Add the capsicum pieces and diced tomato, adding salt and pepper to taste then toss well to coat with the oil. Turn the heat to low and cover the pan with a lid. Simmer for 1 hour, stirring often, until all the ingredients are soft, sweet and intensely flavoured. Serve warm or cold. Email this Recipe:
