Instructions: After roasting Cornish hens, remove from pan. Leave 2/3 cup drippings in the pan and place on burner over medium heat. Gradually add flour to make a smooth paste. Add white wine, red currant jelly, and dry mustard, and season to taste. Stir and bring to boil. Reduce heat and simmer until thickened.
