Ingredients:

1 tbl vegetable oil
1 x shallot minced
1 x garlic clove finely minced
1 x quarter-size slice of fresh ginger peeled, and
finely minced
2 tsp Red Curry Paste homemade or
store-bought, (see recipe)
1 cup coconut milk, preferably low-fat
2 tsp fish sauce
1/2 tsp sugar
1 tbl finely-minced cilantro leaves
1 x minced kaffir lime leaf
Instructions:
Instructions: In a wok, heat the oil over high heat. Saute the shallot, garlic and ginger until soft, 1 to 2 minutes. Stir in the curry paste and cook, stirring, 1 minute. Add the coconut milk and simmer over low heat for 5 minutes. Stir in the remaining ingredients and taste for seasoning.

Serve the sauce over grilled, poached or broiled fish. If prepared ahead, refrigerate the sauce until needed and reheat it just before serving.

This recipe yields about 1 cup.

Comments: This delicious sauce can be served over any favorite grilled, baked or steamed fish. It can be made several hours ahead and reheated just before serving. It is also delicious spooned over rice.
