Instructions: Clean the fruit removing any that are bruised.
In a stainless steel bowl combine the fruit with the sugar and spoon into the jars carefully leaving a 1in gap at the top. Divide the cassis between the jars and then cover the fruit with the eau de vie or vodka. Fasten the lids securely and invert the jars every day for two weeks to dissolve the sugar. Store in a dark place for at least two months. This is great served hot or cold over vanilla or cinnamon ice cream. Email this Recipe:
