Ingredients:
Amount Ingredient
1/2 cup Minced onion
2 tbl Minced garlic
1 tsp Toasted crushed cumin seeds
1 tsp Toasted crushed coriander seeds
2 tsp Minced, seeded hot chile
(such as Serrano or jalapeno)
2 tbl Olive oil
2 lb Chopped fresh young spinach well washed, and tough stems removed
1/2 cup Diced, cooked potatoes
2 cup Simple Sauce With Red Lentils see * Note
Salt to taste
Freshly-ground black pepper to taste
Fresh lemon juice to taste

Chopped cilantro leaves
Instructions:
Instructions: Add onion, garlic, cumin, coriander and chiles to a deep saucepan with 2 tablespoons olive oil. Cook over moderate heat until onions are very soft but not brown. Add spinach and cook briefly until spinach is wilted. Stir in potatoes and Simple Sauce With Red Lentils and season to taste with salt, pepper and drops of lemon juice. Garnish with chopped cilantro leaves and frizzled onions, if desired.

This recipe yields 6 to 8 servings.
