6 x 300-350 g red mullet scaled and cleaned (qv)
6 sm heads trevise or 24 radicchio leaves washed and dried
75 gm butter
2 x garlic doves peeled and cut into fine slivers
200 gm fresh porcini mushrooms brushed clean and sliced
sea salt and freshly ground black pepper
olive oil
6 x sprg fresh thyme
Instructions:
Instructions: Preheat the oven to 230C/450F/Gas 8.

Heat the butter in a pan and fry the garlic until light brown.

Add the sliced porcini and season with salt and pepper.

Make six rectangles of doubled foil dull side out and brush with oil.

Place three or four trevise leaves in the centre of one half of each piece of foil and add two slices of porcini a little of the melted butter and some salt and pepper.

Place the mullet on top with a sprig of thyme inside.

Put some more porcini slices on top with a few extra trevise leaves and a little more melted butter.

Fold the other half of the foil over and seal the edges to make a loose but leakproof package.

Place the packages on a baking tray and bake in the oven for 10-15 minutes. Remove the mullet from the foil and serve with lemon quarters.
