2 x Egg yolks
1 tbl Chopped garlic or more
2 cup Chopped, roasted red bell peppers
2 tbl Dijon-style mustard
2/3 cup Olive oil to 1 cup
Fresh lemon juice to taste
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: In a food blender or food processor, combine the egg yolks, garlic, red peppers and mustard. With motor running, slowly add the olive oil to form an emulsion. The mixture should be thick but not stiff. Season with lemon juice, salt, pepper and Tabasco to taste. Cover and store refrigerated for up to 1 week.
