Ingredients:
Amount Ingredient
1/2 cup Red pepper which has been roasted,
seeded, peeled and diced
2 tsp Minced garlic
1/2 tsp Toasted cumin seed
1/4 cup Minced cilantro
1/4 cup Minced parsley
1/4 cup Chopped fresh mint
1/4 cup Pitted, chopped Kalamata olives
2 tbl Drained chopped capers
3 tbl Extra-virgin olive oil
drops of Lemon juice to taste
Salt to taste
Instructions:
Instructions: Stir all ingredients together and store refrigerated for up to two weeks.

This recipe yields 1 cup of chutney.
