Instructions: 1.Cut plums into quarters, discarding pits. Combine water, sugar, vermouth and lemon peel in a large saucepan. Bring to a simmer over medium heat, stirring to dissolve the sugar. Add the plums and cook gently until very soft, about 15 minutes. Remove from the heat and let cool.
2.Strain plums and their liquid through a fine-mesh sieve, pushing to extract the solids, into a metal mixing bowl. Place in freezer and freeze until half-frozen. Whisk to break up ice crystals and return to freezer. Continue freezing and whisking until the mixture is stiff. 3.Scoop into dessert dishes, and if you like, pour a little sweet vermouth over the top before serving. Email this Recipe:
