3 lb Red Potatoes, in 1" cubes
1/4 cup White Wine Vinegar
1/4 cup Virgin Olive Oil
1/2 tsp Salt
1/4 tsp Ground Black Pepper
1/2 cup Finely Diced Red Onion
1/2 cup Finely Diced Celery
1/2 cup Pickle Relish
1 cup Mayonnaise
3 tbl Dijon Mustard
4 x Hard Boiled Eggs, chopped
Instructions:
Instructions: In a 4-quart saucepan, cooked cubed potatoes covered with water until fork-tender (about 15 minutes). Drain potatoes and place in a large mixing bowl. Sprinkle still-hot potatoes with vinegar, olive oil, salt, and pepper. Add remaining ingredients and adjust seasoning. Refrigerate one hour before serving.
