Instructions: Heat the oil in a kadai or wok.
Add the cumin seeds and aniseed. Just as they begin to change colour drop in the red chilliest Stir 2 or 3 times then add the pumpkin. Sprinkle in the salt and sugar. Cover and cook on a low heat until the pumpkin is easily mashable. Serve very hot with poories. This recipe is a delicate vegetable dish from the northern state of Uttar Pradesh.
