Ingredients:

2 x red peppers grilled (qv)
4 x ripe fresh tomatoes skinned or 1 x 250g tin plum tomatoes drained of their juices
2 tbl olive oil
1 clv garlic peeled and finely chopped
1 x fresh red chilli seeded and finely chopped
1 tbl fresh marjoram leaves
sea salt and freshly ground black pepper
Instructions:
Instructions: Peel and seed the peppersthen chop the flesh finely.

Heat the olive oil in a saucepan and gently fry the garlic until it starts to colour.

Add the chilli and whole marjoram leaves and tomatoes and cook for 30 minutes or until the tomatoes are reduced.

Add the peppers and cook for a further lo minutes.

Season with salt and pepper and dried chilli.
