Instructions: 1. Wipe duck inside and out with a damp cloth. Place breast-side up in a heavy pan. Add cold water to cover and bring to a boil; then simmer, covered, 1 hour.
2. Drain liquid from pineapple and add to duck, along with soy sauce, salt and pepper. Simmer, covered, 30 minutes more. Add pineapple slices during last 10 minutes of cooking. Email this Recipe:
