3 lb red-skinned potatoes, scrubbed
3/4 cup sliced green onion
1/2 cup sliced celery
6 x hard-cooked eggs, peeled, chopped
Freshly ground black pepper to taste
1 tsp Natures Seasons blend (see cooks note)
3 tbl Dijon mustard
1 cup light salad dressing
Instructions:
Instructions: Cube or dice the potatoes as desired and place in cold water to cover in a large pot. Bring to a boil, reduce the heat slightly and cook until the potatoes are tender, about 20 minutes. Drain and allow the potatoes to cool to room temperature.

In a large serving bowl, combine the potatoes, green onion, celery and eggs.

Toss gently to combine. Season with freshly ground black pepper and the Natures Seasons blend.

Add the mustard, salad dressing and sour cream. Mix thoroughly to combine.

Adjust seasonings.
