2 x serrano chiles, seeded and chopped
2 lb red snapper fillets, cut in 1" cubes
2 cup fresh lime juice
1 med grapefruit, Juice of
3 x green onions, chopped
1 tbl fresh cilantro, chopped
112 tsp salt
1/2 tsp ground white pepper
Instructions:
Instructions: Place all the ingredients except the fish in a glass bowl (do not use metal or plastic) and stir with a wooden spoon or a chopstick. Add the fish and stir, making sure that the fish is covered with the liquid. Cover and marinate in the refrigerator for 8 hours or overnight. Let stand at room temperature for 10 minutes before serving. When ready to serve, drain off most of the liquid.
