Instructions: Bring water and lentils to a boil. Scrub but dont peel veggies before chopping; buy organic veggies when possible. Add potatoes, beet, onion, carrot, garlic, peppers and dill. Simmer for 20 minutes or till potatoes are tender. Mash miso and juices together and add after removing the soup from heat and just before serving.
