2 cup low-sodium tomato juice
1 can fat-free reduced-sodium beef broth (14 oz)
1 can reduced-fat condensed tomato soup (10 3/4 oz)
1/2 cup peeled and diced cucumbers
1/2 cup diced green bell peppers
1 cup shredded carrots
1 cup diced celery
1/2 cup sliced green onions
1/3 cup chopped fresh parsley
2 x garlic cloves minced
1 tbl lime juice
2 tsp low-sodium Worcestershire sauce
1/2 tsp salt (optional)
1/2 tsp dried oregano leaves
Fat-free sour cream for garnish
Instructions:
Instructions: Combine tomato juice, beef broth, soup, cucumbers, peppers, carrots, celery, green onions, parsley, garlic, lime juice, Worcestershire sauce, salt and oregano in large bowl. Chill at least 2 hours to blend flavors.

Top with sour cream and cilantro.

This recipe yields 4 servings.
