1/2 cup apple cider vinegar
1/2 cup water
2/3 cup granulated sugar
OR,
2/3 cup Splenda (for dieters or diabetics)
1/4 tsp table salt *
1/2 tsp ground cinnamon
1 lrg Vidalia or sweet type onion, peeled, sliced
Instructions:
Instructions: Combine vinegar, water, sugar, salt, cinnamon and sliced onion in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes.

In another saucepan, bring beets and the liquid from the cans to a boil. Boil for about 2 minutes. Turn heat off.

Pour the hot marinade over beets and let cool. Place in clean jars. Cover and refrigerate for 8 hours or longer. Turn jar occasionally.

* Beets are a vegetable that is naturally high in sodium (salt).
