Instructions: Bring first 4 ingredients to a boil in a saucepan. Cover, reduce heat, and simmer, stirring occasionally, 10 minutes. Whisk together cornstarch and water. Stir into plum mixture, and return to a boil, stirring constantly; boil, stirring constantly, 1 minute. Cool slightly; stir in vanilla. Spread butter evenly on 1 side of bread slices; spoon 1/3 of plum mixture into a lightly greased 9- x 5 inch loaf pan. Top with two bread slices. Repeat layers twice; cover and chill pudding at least 8 hours. Invert pudding onto a platter. If desired, pipe whipped cream around edges.
