Instructions: In a large bowl of electric mixer, cream together margarine, sugar, sugar substitute, vanilla, and egg until batter is light. Add 1 1/2 cups flour, oats, baking powder, and raisins; blend well.
Gather dough together, roll into a ball, and cover with plastic wrap. Chill dough for 2 hours or overnight. Preheat oven to 375 degrees. Roll dough into 3/4-inch balls and place 1 1/2 inches apart on a nonstick cookie sheet. Flatten cookies with bottom of a lightly floured glass. Bake cookies about 8 to 10 minutes or until they are firm and golden brown. Cool cookies before serving. This recipe yields 20 servings. Serving size: 2 cookies. Email this Recipe:
