3 cup chopped fresh rhubarb
2 cup finely-chopped onion
2 cup brown sugar - (packed)
2 cup vinegar
1 tbl salt
Instructions:
Instructions: In a heavy, medium saucepan, stir together all ingredients and bring to a boil. Reduce heat and simmer covered for 30 to 40 minutes or until thick, stirring occasionally.

This recipe can also be processed by placing in sterile hot jars, hot water bath for 10 minutes.
