Instructions: Beat the eggs in a large bowl; add the sugar, flour, nutmeg, and orange juice; stir in the rhubarb. Turn into a pastry-lined 9 inch pie pan. Adjust the top crust and cut vents.

Bake in a hot oven (425 F) for 50 minutes, or until crust is browned and juices bubble in vents. Cool.
