1 x unbaked 9" pie shell
2 tbl butter or regular margarine
1 cup sugar
1/4 cup flour
2 x eggs separated
2 cup rhubarb cut-up
1 cup milk
2 tbl dark rum
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
Instructions:
Instructions: Bake pastry shell in 350 oven 5 minutes. Remove from oven.

Meanwhile, cream together butter and sugar. Beat in flour, then egg yolks. Stir in rhubarb, milk, rum, salt, nutmeg, and cinnamon.

Beat egg whites until soft peaks form. Fold into rhubarb mixture. Turn into pie shell.

Bake in 350 oven 45 to 50 minutes or until rhubarb is tender. Serve topped with whipped cream, if desired.
