1 kg rhubarb
2/3 cup sugar (caster)
400 gm short pastry
2 x eggs
1/2 tsp vanilla essence
1/3 cup milk
Instructions:
Instructions: Chop rhubarb.

Place the rhubarb in a bowl and dust with half the sugar. Leave for 1 hour.

Line a flan dish with the shotcrust pastry and cover with the rhubarb. Beat the eggs, remaining sugar, vanilla milk and cream together in a bowl and pour over the rhubarb.

Cook in the oven at 190C/380F for about 25 minutes.

Serve hot or cold with cream or custard.
